Shakshuka

This is a Middle Eastern favourite of mine! It's such an easy recipe to put together in a short period of time, for breakfast, lunch or dinner! It's simply poached eggs in tomato sauce. At the simplest, as long as you have some canned tomatoes (or the real thing) and eggs - you are basically good to go.

Shakshuka

Ingredients:
- 4 Tblsp Olive Oil
- 1 can whole or diced tomatoes
- 1/2  can crushed tomatoes
- 1 medium onion, diced
- 4-5 cloves of garlic, minced
- 1 green pepper, chopped
- 1 red pepper, chopped
- 5 eggs
- Pepper, Cumin to taste
- Sriracha
- Optional: feta cheese, green onion

Directions:

1) Heat pan with oil on medium. Add onions, cook until translucent and add some pepper and cumin to onions. Add garlic, cook for 2-3 minutes and then add chopped green and red pepper. Roughly 8 minutes.

2) Add all tomato ingredients, stir well. Add in spices and sriracha and cook for about 6-8 minutes. 

3) Egg time. Make a little "hole" in the mixture as a little home for each egg. We are going to cook these over easy on medium for about 10-15 minutes covered with a lid. 

4) If you choose to add feta cheese at the end, after about 8-10 minutes of the shakshuka cooking with the eggs in, add it on in. 

5) Eat!
