Slow Cooker Beef


The perfect companion in a tortilla (or lettuce wrap), taco shell, or just on the plate. This recipe can take on so many different forms!

Slow Cooker Beef

Ingredients:
- 1 1/2 pound flank steak
- 1/4 cup tapioca flour
- 1/2 cup gluten-free soy sauce (or use paleo alternative)
- 1/2 cup vegetable or beef broth
- 1/2 Tblsp white wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon ginger
- 1 teaspoon onion powder
- pepper to taste
- 1/2 teaspoon red chill flakes
- 3 Tblsp honey
- 1/2 Tablespoon paleo nut butter
- 3 cloves garlic, minced
- 1 Tblsp liquid smoke
- 2 zucchini
- 2 carrots

Directions:

1) Slice the meat thinly, coat with tapioca flour and shake off excess.
2) Add all liquids, nut butter and spices into slow cooker and mix well. Add meat, and put zucchini and carrots on top.
3) Cook for 4 hours on low.
