Pastel de Papa Recipe

Do you like Sweet Potatoes? Do you like meat? Well, I don't think you really could be reading this blog if you didn't - these are staples of the Paleo diet! Crossfit Kitchen (Constantly Varied Kitchen) came out with Paleo Nick's amazing recipe.

Ingredients
- 2 lbs of ground beef
- 5-6 hard boiled eggs, chopped
- 4 large sweet potatoes, cut into pieces (next time I would use 5)
- 1 onion, diced
- 3-4 cloves of garlic, minced
- 1 28oz can of crushed tomatoes (can use sauce or puree)
- 1 Tbsp of oil
- 1 jar of sliced olives (about 18 ounces)
- Seasonings to taste: pepper, chili pepper, italian seasoning
1. Boil sweet potatoes in hot water. Once boiled, turn down to simmer and until tender (you should be able to put a fork through it).
2. While potatoes are cooking, let's make the meat mixture. Heat olive oil in pan, add garlic first for a few minutes then onion.
3. Season the beef, and add it to the pan. Break up meat into crumble using wooden spoon until brown and well chopped. If you choose (and this is my preference) once cooked, put meat in strainer to get rid of the fat and clean up pan. Once strained, return meat to pan.
4. Add crushed tomato and olives until well mixed. Gently add the chopped eggs in. Add extra seasoning if you want. Transfer meat mixture into heat safe pyrex.
5. Sweet potatoes should be done, strain water out. Add back into pot and mash away.
6. Cover meat with sweet potato mash. Throw into the oven at 350F for 10-15 minutes to give the sweet potatoes a nice finish (completely optional).
